Unagi means freshwater eel in Japanese. Kabayaki is the process in which the eel is split in half and dipped into soy sauce before being broiled on a grill.
This process gives the eel a unique soft, thick finish that feels as if the small bones are not even there at all. Unagi has a crispy and firm texture, with a sweet, succulent rich flavour.
