Shiro Dashi is a soup base made from bonito, kombu dashi, soy sauce, mirin and sugar.
It's often used by professional chefs but it's useful in the home too.
It's suitable for making Chawan mushi (Japanese steamed egg), Dashimaki tamago (Japanese omelette), Udon, Oden, and more!

Chawan mushi (Japanese Steamed Egg)/ 茶碗蒸し
Serving: 4

    • SHIRO DASHI- 30 ml
    • Water 360 ml
    • Egg- 2 pieces
    • Chicken Breast- 60g
    • Shiitake mushrooms- 4 pieces
    • Gingko Nuts- 8 pieces
    • Spring Onion- Topping

1, Whisk the egg in the bowl, add SHIRO DASHI and water. Mix well.
2, Strain the mixture into another bowl.
3, Cut chicken breast into cube, Shiitake mushrooms into half.
4, Devide all the ingredients to 4 cups.
5, Gentry pour the egg mixture into cups.
6, Steam it for 15-20 minutes on the law heat.
7, Garnish spring onion before serving!
