It comes whole fillet about 2kg +/-. You cannot finish so much at once?
1, Cut into 4-5 portions.
2, Pat dry it with kitchen paper. - Lion Leed paper has better absorption and used by many sushi chef.
3, Wrap each portion with cling wrap.
Recommend to put it in Zip lock for extra protection from exposure of air.
4, Store in freezer.
